Rummaging through my fridge, looking for some basic ingredients to make a delicious lunch, i thought to myself… Pasta Salad, everyone loves pasta salad!
I used whatever I could find in my fridge – but be adventurous, use whatever your favourites are!
My basic pasta salad ingredients:
250g Macaroni – Cooked
3-4 Tablespoons Mayonnaise (use a little less or a little more, some people like really tangy salad)
4 Gherkins (Pickled cucumbers) – finely diced
1/2 Onion – finely diced
1/2 Small Green Pepper – finely diced
4-5 Peppadews – finely chopped (you can use red or yellow pepper too)
1 Teapsoon Dijon Mustard
Salt & Pepper to taste
Mix thoroughly and refrigerate for at least 2 hours.
Feel free to add in some salami, avocado, feta or cheddar cheese, whatever your heart desires!
