Mexican Stuffed Shells – Yum!!

Mexican Stuffed Shells

 

I’m making this tonight, I cannot wait…starving!  Perfect for the cool autumn weather!

This beautiful photo and recipe is from:  Maeghan, however I have adapted it for us South Africans who don’t always have the same type of ingredients and products as overseas.

Original Recipe:

 Ingredients:
1 lb. ground beef
1 package low-sodium taco seasoning
4 oz. cream cheese
14-16 jumbo pasta shells
1.5 cup salsa
1 cup taco sauce (This is a smooth, tomato based sauce found in the Mexican section)
1 cup cheddar cheese
1 cup monterey jack cheese
3 green onions
Sour cream

Preheat oven to 350°.

In a frying pan cook ground beef; add taco seasoning and prepare according to package directions.  Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.  While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.

Pour salsa on bottom of 9×13 baking dish.  Stuff each shell with the meat mixture. Place shells in 9×13 pan open side up. Cover shells with taco sauce.  Cover with foil and bake for 30 minutes.

After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed.  Top with any condiments you’d like (green onions, black olives, etc.) Serve with sour cream and/or more salsa.

Adapted Recipe:

 Ingredients:
500-600g minced beef
1 package low-sodium taco seasoning (Old El Paso or Casafiesta brand – Pick n Pay stocks both)
120ml cream cheese
14-16 jumbo pasta shells (Conchiglioni)
1.5 cup salsa (try the Old El Paso brand, they have hot and mild)
1 cup (250ml) taco sauce (try the Old El Paso or Casafiesta brand)
1 cup (250ml) cheddar cheese – grated
1 cup (250ml) tussers cheese – grated
3 green onions
Sour cream

Method:

Preheat oven to 180°c.

In a frying pan, cook minced beef; add taco seasoning and prepare according to package directions.  Add cream cheese, cover and simmer until cheese is melted. Blend well. Recipe To Do List – Infused Sugar

Vanilla Infused Sugar using Vanilla Pods

 

Citrus & Lavender Infused Sugar

 

I love doing this, and need to make more.  My ultimate is vanilla infused sugar, unfortunately now I don’t want to use any other sugar 😉

Supplies
Sugar, vanilla pods, citrus fruit, lavender,  glass container with seal, a zest and ribbon or twine to garnish.
Directions
1. Zest the fruit  you want to use to give your sugar a touch of flavor. Leave it out overnight to dry.
2. Layer the sugar and the zest/seeds/flowers in a glass container. When you reach the top add some extra zest for color.
3. Let the sugar sit for at least one week before you use or hand them out as favors. This will give the sugar optimal flavor!
4. If you use lavender or espresso beans you can remove them by straining the infused sugar into a separate bowl before using it in a recipe or coffee. Or you can grind the beans and lavender to a super fine consistency and leave them in the sugar.
5.  For vanilla infused sugar, simply add the pods to the sugar in a jar for a week.

Random Prettiness & Delicious Surrender

Have you ever had one of those really frustrating days?  Hungry but don’t know what to eat and too lazy to be creative.  Online banking site being slow, therefore the payment to the Stationery company cannot be processed, which means no cartridges which in turns means no lists, no printables, no fun.  One of those days when things and people at the office are moving at least 10 times slower than what you are.  It also appears to be idiot day, when people don’t understand the basics of, well, just about anything!

So here is to getting out of the funk, and lifting the dull dreary frustrated mood which is currently overwhelming!

Let’s look at all things pretty and delish shall we, while I sip my decaf coffee and think of yellow…

Bacon, Cheese, Potatoes Slow Cooked - CARBS...droool

Bacon Cheese Potatoes (Slow Cooked)
Prep Time: 10 mins Cooke Time: 10 hours Total Time: 10 hours 10 mins Serves: 4
Ingredients
1/4 pound bacon, diced
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced
1/2 pound cheddar cheese, thinly sliced
salt and pepper
butter
Green Onions (optional)
Directions
1. Line crockpot with foil, leaving enough to cover the potatoes when finished.
2. Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste and dot with butter.
3. Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
4. Cover with remaining foil.
5. Cover and cook on low for 10-12 hours.
Notes
Make this recipe bigger if you are expecting company. Great to serve for a brunch!

Fresh n Easy Watermelon, Tomato & Feta Salad

Divine!

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped mixed fresh herbs
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 4 heirloom tomatoes, cut into chunks
  • 1 cup (1-inch) cubed red seedless watermelon
  • 1 cup (1-inch) cubed seeded yellow watermelon
  • 1/4 cup vertically sliced red onion
  • 1/2 cup crumbled feta cheese

Preparation:

  1. Whisk together first 4 ingredients in a large bowl. Add tomato, watermelon, and onion; toss to coat. Sprinkle with cheese; toss gently.
  2. Add some fresh herbs, parsley, chives, basil.  Salt and Pepper to taste

Quick Pasta Salad

Rummaging through my fridge, looking for some basic ingredients to make a delicious lunch, i thought to myself… Pasta Salad, everyone loves pasta salad!

I used whatever I could find in my fridge – but be adventurous, use whatever your favourites are!

Great on it's own or serve as a side dish

 

My basic pasta salad ingredients:

250g Macaroni – Cooked

3-4 Tablespoons Mayonnaise (use a little less or a little more, some people like really tangy salad)

4 Gherkins (Pickled cucumbers) – finely diced

1/2 Onion – finely diced

1/2 Small Green Pepper – finely diced

4-5 Peppadews – finely chopped (you can use red or yellow pepper too)

1 Teapsoon Dijon Mustard

Salt & Pepper to taste

Mix thoroughly and refrigerate for at least 2 hours.

Feel free to add in some salami, avocado, feta or cheddar cheese, whatever your heart desires!
